I have now made 3 batches of this fine wine and the results are very consistent.

Given the odd bottle to friends who cannot believe this is "home brew". I have found the secret of success is constant fermentation temperature and ferment out at 21.5 degrees centigrade throughout the process.

Get yourself a "brew fridge" (details on you tube and other home brew sites) and see (taste) the results.

Easily comparable to shop bought wines and less than quarter the cost.

At a push this is drinkable after 1 month maturation but improves to 6 months. Haven't managed to keep any longer than this !!

Having recently bottled this (about a month ago) I can confirm that the quality is very good having opened a bottle after 1 month maturation.

Obviously this will improve over the next few months and I propose to open another in about 6 weeks....just to see how it is progressing!! I added just half the amount of oak chippings to my brew as I fell that merlot should not have too much of a "woody" balance.

Just about to begin a 5 gallon batch of the cabernet to which I will add the full amount of chippings. Will post again to update results as and when I can confirm results.

Once again, A superb service from the Grimsby Homebrew Centre.
